Students tired of eating frozen burritos and cold sandwiches from the bookstore are in luck.
Brookhaven College is remodeling the cafeteria to build a new Subway, which is scheduled for completion spring 2008. Until the construction is finished, students are relying on the bookstore for their meals and snacks.
Lindy Tinnin, assistant manager of Follet bookstore, said, "Since the cafeteria has closed, our sales have tripled."
Follet is currently under contract with a vendor to sell subs, soups, chips and ice cream.
"We are finding that most students find out about us through word of mouth," Tinnin said. "We understand this is temporary and once Subway is open our contract may be gone."
The original plan called for construction to begin early summer 2007, but because of delays, the bookstore contracted with Brookhaven to provide the needs of the students and faculty.
Robert Hudson, owner of several Subway franchises, said, "I am very excited about the opportunity and what we can provide to Brookhaven."
Hudson operates two other Subway locations at North Lake and Eastfield colleges. In addition to serving subs, Subway will also serve breakfast.
Hudson said he will look at adding other options, which includes a barista (person who sells and serves coffee) and food items other Subways do not offer such as nachos, popcorn and hotdogs.
The Subway will be open 7 a.m.-6 p.m. Monday-Thursday and 7 a.m.-3 p.m. on Friday. Hudson said the hours are subject to change and services may expand to catering for meetings, events and sporting events based on demand.
Dawn Bishop, assistant to the vice president of business services, said Subway will absolutely fill the need for students.
Bishop said, "We will try to work with our vendor to provide the best options to the students and customers' needs."
Amanda Cotten, freshman, said: "I think I'll get more for what I pay. It will be nice having a Subway since my schedule sometimes doesn't allow me to go home and eat."
